What is HotLime? Floyd's Famous HotLime sauce is a new, completely unique hot sauce produced by HotLime, Inc. in San Francisco. HotLime has a key lime juice base, which immediately sets it apart from familiar "red" hot sauces which all have a vinegar base. HotLime adds the flavor and heat of habanero peppers to the crisp citrus base of the key lime juice to form a completely original and amazing taste experience. What are the different versions of HotLime? Floyd's Famous HotLime sauce is available in two versions, HotLime Green and HotLime Extra Hot. HotLime Green contains exactly half of the habaneros as the Extra Hot, so obviously it features less heat which lets more of the distinct lime flavor come through. HotLime Extra Hot, as the name suggests, packs more of a habanero-fueled punch, while maintaining a distinct undercurrent of lime. How and When Should I Use HotLime Green? HotLime Green, the milder of the two versions of Floyd's Famous HotLime sauce, can be used be used more liberally and in more ways than a conventional hot sauce. Try it as a marinade for fish and chicken, as a dipping sauce for crab, lobster or oysters, in dressings (either with oil and vinegar or even as a vinegar substitute) and anytime you want a splash of citrus and zip. Also great mixed in with things like egg salad and tuna fish. And try a few splashes in a bottle of Corona, instead of, or with, the usual wedge of lime! How and When Should I Use HotLime Extra Hot? HotLime Extra Hot contains double the habanero peppers compared with HotLime Green, so it packs twice the wallop! That extra burst of heat really hits the spot with many Mexican dishes, soups, guacamole, stir fry and any time you need to add some fire and flavor to your food. Incredible in a Bloody Mary! Any time you would have been tempted to reach for a traditional "red" hot sauce, use HotLime Extra Hot instead!
